Garlic Sauce a la Magliano (Mama Flori’s Recipe)


  • Garlic – 6 cloves

  • Salt – 2 teaspoons

  • Sunflower Oil – 2 teaspoons

  • Water – 350 – 400 ml


      1. In a pestle and mortar, bash the garlic and salt, until you obtain a fine paste.

      1. Add the oil on top of them and mix well. Let stand for 10 minutes (this helps the garlic sauce to be a lot mellower with the walls of your stomach) to rest, then move your mixture into a big glass and add water on top of it.

      1. Mix well and serve.

Preparation time: 12 min

Total time: 12 min


  • If you want to store your garlic sauce, you can do so and it will last in your fridge for up to 5 days.

Tip: You can serve this recipe on top of some french fries or polenta with grilled meat and it will complement them wonderfully!
