Caramelized Pineapple with Vanilla Ice Cream, Caramel Sauce and Dulce de Leche

Ingredients:

  • 1 Pineapple

  • Sugar – 2 teaspoons

  • Caramel Syrup (we used store-bought) – to taste

  • Vanilla Ice Cream (we used store-bought) – to taste

  • Dulce de Leche (we used homemade) – to taste

Instructions:

      1. Start by cutting the pineapple with a long, sharp knife. Turn the fruit over and slice the top part (where the leaves are attached to the fruit). Don’t throw it away!!! You will be using it to decorate your platter later. Now look at the core, the center of the pineapple, and slice down right through the middle, splitting the fruit in 2! Next, slice each of the 2 pieces in half as well, and take each quarter and slice them in half as well. Lay down flat the wedges of pineapple and slice the core off. You should be left with perfect little boats of pineapple! Now all you have to do is take each of them and slice right underneath, in between the skin and the pulp, but stop right before you reach the end (you want to separate more than half of the fruit from the skin, but still let it attached to it). Slicing part of part of the skin makes it easier to eat but still gives you control when cooking it!

      1. Next, heat a griddle pan, as hot as you can. Place the pineapple wedges in the pan and push them down as soon as they hit the pan, so you really mark the pineapple. Leave them for 2 minutes on each side and as soon as you turn them on the other side, sprinkle them with a little touch of sugar. This is gonna glaze them.

      1. While they are cooking, slice the top of the pineapple (the leaves) right through the middle and place them on your platter.

      1. Drizzle the pineapple slices with some caramel syrup and serve with some vanilla ice cream and some dulce de leche!

Notes:

  • We got this recipe from Gordon Ramsay although he is not serving it with dulce de leche or ice cream. That was a nice addition destined to suit the taste of the little munchkins that run wild in our household!

  • We advise to try and prepare his recipe for spiced caramel sauce. Homemade is always better than store bought!

Tip: You can leave out the dulce de leche and use just the ice cream or you can even leave it to the caramel syrup to do all the work and enjoy more of a simpler version. It’s all up to you and your taste! Make it your own.
